Is There Really Mold in Coffee?

You’ve probably seen the claim. A post, a podcast, a bag that promises “mold-free.” It sounds alarming, like your morning cup is quietly working against you.
So what’s actually going on?
Short version: mold can show up in coffee if the fruit is mishandled after harvest. That’s real. It’s also not the whole story. In well-processed specialty coffee, the levels people worry about are extremely low. What people mean when they say “mold in coffee”

They’re usually not talking about a fuzzy green bean sitting in your grinder. They’re talking about mycotoxins — compounds some molds can leave behind when coffee stays too wet for too long.
The two names that come up most:
• Ochratoxin A (OTA) — the one most associated with coffee
• Aflatoxins — more famous in peanuts and corn, occasionally discussed with poorly stored coffee
Those molds like warmth and moisture. Coffee cherries are wet when they’re picked. If they sit in piles, dry too slowly, get left on the ground, or sit in a damp warehouse, the conditions get friendly for the wrong microbes.
That’s the risk. It’s a handling problem, not a “coffee is dirty by nature” problem.
Why this became a marketing story
A few studies over the years found mycotoxins in some coffee samples. Those numbers got flattened into “most coffee is moldy,” which is a great headline and a sloppy conclusion.

A few things usually get left out:
Commodity coffee (the cheap, blended, anonymous stuff) is not graded the same way specialty coffee is. Lots of that coffee is dried fast and cheap, sometimes in thick layers, sometimes after cherries have sat too long. That’s where problems cluster.
Specialty coffee is a different supply chain. To even be specialty, a lot has to pass a physical inspection. Under SCA green grading, a single fungus-damaged bean in a sample counts as a primary defect — same weight as a full black or full sour bean. One of those can knock a lot out of specialty grade.
Visible mold isn’t the only issue, and toxins aren’t always sitting on a bean you can pick out by eye. Still, the farms and mills that make specialty coffee are already doing the work that keeps moisture, defects, and sloppy drying in check. That’s why the scare doesn’t map cleanly onto a carefully sourced bag.
Roasting also knocks a lot of OTA down. Studies commonly show big reductions — often in the range of about 70% to well over 90%, depending on roast and starting level. It isn’t a magic eraser for a badly handled lot. It is another layer on top of good processing.
And the amounts that show up in commercial roasted coffee, when they show up at all, are usually traces. The EU caps OTA in roasted coffee at 3 µg/kg. A lot of specialty coffee tests well below that, or below what labs can even detect.
None of this means “ignore it.” It means the useful question isn’t “does coffee have mold?” It’s “how was this coffee handled after it left the tree?”
What clean processing actually looks like

Coffee is a fruit. The seed inside that fruit becomes the green bean. From the moment cherries are picked, the clock starts.
Clean coffee usually means some mix of these habits:
Pick ripe fruit, not everything on the branch. Overripe and fallen cherries are more likely to carry problems. Soil-contact fruit is a known higher-risk source in research.
Get the fruit processed quickly. Delay is where moisture sits still.
Control water. Washed (wet) processing removes the fruit and mucilage with water, then dries the parchment. Studies often find lower OTA in wet-processed lots than in fruit left to dry whole, especially when drying is sloppy. Naturals and honeys can be excellent — they just need tighter drying discipline because more fruit stays on the bean.

Dry it all the way, and evenly. Target is around 10–12% moisture. Too wet and mold has a chance. Too uneven and you get pockets that stay damp while the rest looks fine. Raised beds, thin layers, frequent turning, or well-run mechanical dryers all exist for this reason.
Sort hard. Floaters, insect-damaged beans, blacks, sours, and anything that looks off get pulled. That’s flavor work and food-safety work.
Store it dry. After milling, green coffee needs to stay stable — proper bags, reasonable humidity, no “it’ll be fine in the shed.”
None of that is glamorous. It’s the unsexy part of a good cup. It’s also why “specialty” isn’t just a tasting-score flex. The same habits that make coffee taste clean tend to keep it clean.

How to think about “mold-free” on a label
A few honest notes, because the term gets used loosely:
“Mold-free” is not a regulated certification. Anyone can print it.
What does matter is the supply chain behind the words: specialty grade, known producers, clean processing, fresh roast, whole beans stored well at home.
Lab testing for OTA and aflatoxins is the most concrete proof a brand can publish. If a company shares third-party results, that’s useful. If they only have a badge and a scary paragraph, treat that as marketing.
You do not need a $30 “detox” bag to drink coffee without worrying. You need coffee that was handled like food.
At home, the usual good habits still help: buy whole bean, keep it dry and sealed, don’t let it sit open in a humid kitchen for months. Once coffee is roasted and dry, you’re not growing a science experiment on the counter unless you really try.
The honest answer

Yes, poorly handled coffee can develop mold and mycotoxins. That’s why processing and grading exist.
