Decaf Doesn’t Have to Taste Like a Compromise

Decaf gets talked about like it’s a compromise. Like you only order it when you have to, and you already know the cup is going to taste thinner than the one you actually wanted.

That’s not how it works at Generous.

Our decaf is the roast people compliment the most. Not “for a decaf.” Just, the most. Sweet, smooth, and full of the same character you get from a regular cup, minus the caffeine.

Specialty decaf starts the same way any good coffee does: with high-quality green beans. The difference is what happens next. If the beans are solid and the process is gentle, you don’t have to give up flavor to skip the buzz.

We use the sugarcane process. Ethyl acetate, the compound that pulls the caffeine out, comes from sugarcane. It already shows up in fruit, and it can be made from fermented sugarcane. In decaf, that compound is mixed with water and used to wash the beans. Caffeine dissolves into the wash. Most of the flavor compounds stay in the bean.

Here’s how it goes.

The green beans are steamed or soaked so they soften and open up. Then they sit in the water and ethyl acetate mix. The ethyl acetate bonds with the caffeine and carries it out. After that, the beans are steamed again so any leftover ethyl acetate evaporates off. Then they are dried and roasted like any other coffee.

About 97% of the caffeine comes out. What’s left still tastes like the coffee it started as, just without the kick. That’s why we picked this process. It isn’t a harsh chemical bath, and it doesn’t strip the cup flat.

Decaf shouldn’t be an afterthought, and it shouldn’t taste like one. “Decaf” should describe what’s missing, not what’s lacking.

The result is a cup you can drink in the afternoon, after dinner, or any time you want the coffee without the caffeine. Same care in the roast. Same flavor people keep mentioning. Nothing you have to talk yourself into.
